Rainy and cloudy days are less and less frequent, and we cherish the warm rays of sun more and more each day. Oh… and it’s the time of year where the fruits are ever are available! It’s summer!
You’ve probably noticed that you eat different types of foods as the seasons come and go. In winter we tend to go for worm and rich meals to stay warm. During the summer season we crave refreshing dishes to keep us hydrated and cool.
So, I want to share with you the easiest, and most complete salad that I prepared these days. You just need 4 ingredientes:
Quinoa
Hummus
Avocado
Fruit of choice: mango, peach, nectarine, strawberries, your choice!
As I mentioned earlier, you just need 2 minutes but…. you just need to have the quinoa and hummus (I usually buy one from the store or make it myself before hand if I have time) ready to go. Then just mix up all the ingredients and you are ready to go.
Quantities? Ah yes! I leave this up to you. I usually adjust the amount of quinoa depending on how hungry I am, I add two tablespoons of hummus and 1/2-1/3 of avocado depending on its size, and finally, I include the fruit. Of course, I add salt if needed.
Oh, and if you love it for summer and will miss it in winter. Don’t worry! You can just warm the quinoa and you’ve got it.
I really like this plate because it is very nutrient rich: complex carbohydrates, fiber, proteins, healthy fats, and also full of vitamins and minerals.
