Christmas is right around the corner. You probably already have plans with family and friends which include delicious lunch and dinner dates. Why not indulge and stay healthy this holiday season? I present my latest invention and your X-mas party star: a brownie that is equivalent to having a bowl of cereal and a bit of avocado. No joke! You can make it for any occasions or even eat for breakfast (guilty!). Are you ready?

Brownie

250 grams of oat flour
75 grams of coconut sugar
1 medium avocado
400 ml of oat milk
4-6 spoonfuls of cacao powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1  teaspoon salt
1 pinch of vainilla
A bit of margarine (for nonstickyness of the dough)

Pre-heat your oven at 180ºC or 350ªF.  Begin by smashing the avocado with your mixer and include the rest of the ingredients except margarine. If the dough looks too thick, add a bit more of oat milk.  Prepare the molds by placing a bit of margarine and covering it with oat flour. Place mix in mold and bake for about 30 minutes. QUICK TIP! It is better for it to be under-baked  than over-baked. Allow it to cool.

Icing

2 tablespoons of cocoa powder
3 tablespoons of coconut oil (melted)
2 tablespoons of coconut syrup

Once the brownie is after the oven, melt coconut oil in a small pot, remove from heat, and add cocoa poder and coconut syrup. Pour the icing on top of your brownie.

MY TOP SECRETS FOR THE PERFECT BROWNIE :)

1. Allow your brownie to cool down in a closed tupperware. This will make it "sweat" and preserve its moist.

2. You can add a bit of orange zest to the brownie mix: A-M-A-Z-I-N-G!

3. Top your brownie with nice cream (3-4 frozen bananas).

Did you try it at home?

I'd love to hear how it turned out. Write me an email or tag me on Instagram @livinglavidayoga.
